Here at Kimble's there are many things that we enjoy, one of these being cooking delicious food for our customers. We felt like it wouldn't be right to keep all of this goodness to ourselves. In 2018, the Kimble's crew teamed up with the United Way of West Georgia, Inc. to publish "Cooking With Kimble's Food By Design: Good People Sharing Good Food!" This was a way for us to begin sharing some of our best recipes with one another, and now we want to share with you! Kimble’s is starting a Kimble’s Cookbook series where we let you guys in on some of our most delicious secrets. We hope you enjoy Kimble’s Cookbook as much as we do!
Loaded Potato Soup
6 Slices of Bacon, Chopped
1/2 Sweet Onion Diced
1 Clove Garlic Minced
3 1/2 Cups of Chicken Broth
5 Baking Potatoes Peeled and Diced
1/2 Cup of Flour
1 Cup of Milk
1 Cup of Heavy Cream
12 Oz of Evaporated Milk
2 Cups of Grated Cheddar Cheese
1 Tsp of Salt
1 Tsp of Ground Pepper
Additional Cooked Bacon, Green Onions, and Cheddar for toppings
Add bacon to a large skillet and fry until nearly crisp. Add onion and garlic to the skillet with the bacon. Cook until the onion has softened and garlic is fragrant. Add bacon, onion, and garlic to a 6 quart slow cooker with the chicken broth and potatoes. Cover on high for 3 hours or until potatoes are fork tender. Add flour and milk to a mason jar and close tightly. Shake well to combine. Alternately, whisk the flour and milk together in a small bowl. Pour flour mixture into the soup and stir to combine. Add cream, evaporated milk and grated cheddar to the soup and stir. Cover and cook on high for 30 minutes. Use a potato masher to mash the potatoes to reach the desired thickness for the soup. Ladle hot soup in to bowls and garnish with cheddar, bacon and green onions if desired.
